This beer is a celebration of the province’s raw riches. Malt from Penhold, Strathmore, and Alix. Hops from Taber. Yeast, water, and brewing talent from Calgary. This beer was also a bit of an exercise in delayed gratification. We thought it was done a few times over the more than 20 months it spent conditioning, but it kept evolving, and we exercised discipline by waiting until it was just right. It’s every drop a Saison, funky, bright, complex, and untamed. Thusly named because it gifted us with a moving target and also because, as much as we’re celebrating 9 years in business, we’re far from finished.
